Ingredients:
For the cake:

For the strawberry filling:

1 lb fresh
strawberries, hulled and sliced

1/4 cup granulated
sugar

1 tbsp cornstarch
·
1 tbsp lemon juice
For the frosting:
·
1/2 cup unsalted
butter, at room temperature
·
1/2 cup cream cheese,
at room temperature
·
2 cups powdered sugar
·
1/4 cup unsweetened
cocoa powder
·
1 tsp vanilla extract
·
2-3 tbsp milk
Instructions:
1. Preheat your oven to 350°F (180°C). Grease two
9-inch round cake pans with butter or cooking spray. Set aside.
2. In a medium-sized bowl, whisk together the
flour, cocoa powder, baking powder, baking soda, and salt.
3. In a separate large bowl, beat together the
sugar and vegetable oil until smooth. Add in the eggs one at a time, beating
well after each addition. Stir in the vanilla extract.
4. Gradually mix in the dry ingredients,
alternating with the milk, until the batter is smooth and well combined.
5. Divide the batter evenly between the prepared
cake pans and bake for 25-30 minutes, or until a toothpick inserted into the
center of each cake comes out clean.
6. While the cakes are baking, prepare the
strawberry filling. In a medium-sized saucepan, combine the sliced
strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat,
stirring constantly, until the mixture thickens and the strawberries are soft
and tender.
7. Remove the saucepan from the heat and let the
strawberry filling cool to room temperature.
8. To make the frosting, beat together the butter
and cream cheese until light and fluffy. Gradually add in the powdered sugar
and cocoa powder, mixing until well combined. Stir in the vanilla extract and
enough milk to achieve a smooth, spreadable consistency.
9. Once the cakes have cooled completely, place
one cake layer on a serving platter or cake stand. Spread a layer of the
strawberry filling over the top of the cake, then place the second cake layer
on top.
10. Frost the top and sides of the cake with the
chocolate frosting. Decorate the top of the cake with additional sliced
strawberries, if desired.
